Located on the top floor of the former Television Centre in White City, Endo at the Rotunda is the debut restaurant of Chef Endo Kazutoshi, a third-generation sushi master. Rooted in the centuries-old Edomae style of sushi, Endo’s philosophy blends heritage and innovation, creativity and consistency, delivering an immersive and intimate omakase experience that has earned critical acclaim.

The Role

We are seeking a Sous Chef who is eager to refine their craft in one of London’s most exclusive omakase kitchens. This is a rare opportunity to work closely with Chef Endo and a team of exceptional professionals, developing a deep understanding of Japanese precision, technique, and tradition.

In this role, you will support the seamless execution of our multi-course omakase menu, ensuring that every dish reflects the artistry and excellence that defines Endo at the Rotunda. You must be committed to precision, consistency, and continual learning, thriving in an environment where every detail matters.

What We’re Looking For:
  • Strong leadership skills and the ability to support and inspire a high-performing team
  • deep appreciation for Japanese cuisine, particularly Edomae-style sushi
  • Exceptional knife skills and precision in execution
  • A willingness to learn directly from Chef Endo and refine your techniques under expert guidance
  • Calmness and focus under pressure, with an unwavering commitment to excellence
  • Meticulous attention to detail, from ingredient selection to plating
Qualifications:
  • Experience: Previous experience in Michelin-starred or omakase dining will be very welcome. A strong background in Japanese cuisine is highly desirable.
  • Skills: A disciplined, organized, and adaptable approach to high-intensity service.
  • Passion: A deep respect for Japanese culinary traditions and a drive for continuous learning.
  • Legal Right to Work: Must have the legal right to work in the UK.
  • Flexibility: This is a full-time role, requiring availability on evenings, weekends, and holidays. 
  • Regular days off will be Monday and Sunday.
